More than just a snack!
Here comes a recipe for you and your kids…. and your friends… and family… simply for everyone! Streetfood alla italiana is what I like to call this delicious snack. Kind of a cross between a wrap and flatbread, it's topped with all sorts of delicious ingredients, then folded up and eaten immediately! And the best part… you only need 5 ingredients to make it….

  • 350 g pastry flour (soft / patent)
  • 100 ml water
  • 0,5 tsp baking powder
  • 80 g pork lard
  • 10 g salt

Directions
  • Put the flour in the mixing bowl of the stand mixer. Add salt, lard and baking powder and let knead on low speed with the dough hook.
  • Add the water little by little. Let knead until the dough has a nice firm consistency. Then form into a ball and return to the bowl. Cover with a cloth and let rest for 30 minutes at room temperature.
  • Afterwards, remove from the bowl and divide into four equal pieces. Shape each of them into a ball. Cover again and let rise for another 30 minutes at room temperature.
  • After resting, shape the piadina. Put the dough balls on a floured work surface and roll out round with a rolling pin. The dough should remain at least 2mm/80mil thick.
  • Now heat a frying pan (without oil!). Fry the piadinas one after the other on both sides for 2 minutes until they are lightly browned.
  • Now the piadinas are ready to be topped and folded. You can give free rein to your creativity!

A few ideas for the topping:
  • Salmon, avocado and yogurt cream
  • Cooked ham & montasio cheese
  • Fried sardines and burrata
  • Zucchini und stracchino cheese
  • Tomato & mozzarella
