The main ingredient in pistachio cream is, of course, the pistachios themselves. These little green powerhouses are not only delicious, but also rich in valuable nutrients.   • First cook the shelled pistachios in boiling water for about 10 minutes. Then drain and leave to cool on a clean tea towel for 2-3 minutes. Rub off the skin as best you can with the cloth.
