Directions
  • First, carefully wash the vine tomatoes under cold running water. Then remove the stems. Cut the tomatoes in half and then remove the inner seeds by gently squeezing them.
  • Now place the tomato halves in a large pot and wilt over low heat for about 30 minutes. Stir occasionally. Then season with a little salt, mix well and let rest briefly.
  • Equip the food mill with the medium or fine disc. Now add a few of the tomatoes at a time and strain by carefully turning them into a bowl below.
  • Heat the olive oil in a large frying pan and saute the whole peeled garlic cloves until translucent.
  • Then deglaze with the previously strained tomatoes, season with salt and pepper and simmer on low heat for 25 minutes. Stir occasionally during this process.
  • Then remove the garlic cloves from the sauce.
  • Finely chop the basil and add to the sauce. Stir everything well and simmer gently for another 5 minutes.
  • Now the delicious sauce can be used with any type of pasta!

The sauce keeps fresh in an airtight container in the refrigerator for about 2 – 3 days!
