Sundried tomato pasta salad with feta and pine nuts

What a beautiful weather! We Italians love the heat… and we love pasta! That’s why we invented pasta fredda (cold pasta or pasta salad)! Did we? Yes, I think we did. Anyway… This dish is also known as Italian pasta salad. The sundried tomatoes and fresh feta give it its typical Mediterranean flavor. Pine nuts and basil round out this vegetarian dish!

  • First, bring a pot of well-salted water to a boil and cook the macaroni until al dente. Then drain, put in a large bowl and let cool briefly.
  • Cut the dried tomatoes and the feta into small pieces. Add to the pasta together with the pine nuts.
  • Mix with white wine vinegar and some of the oil from the dried tomatoes, season with salt and pepper. Mix everything properly and then let it rest for half an hour before eating. This will allow the flavors to develop nicely.
  • To serve, place on small plates or salad bowls and garnish with chopped basil.
