  • Remove the ends from the beans, wash and dry them. Heat the olive oil in a large pot and saute the beans, stirring occasionally.
  • Peel and finely slice the onion and carrots, add to the pot and sweat briefly. Then deglaze with the peeled tomatoes.
  • Mix everything thoroughly and simmer on medium heat for 30 minutes. Stir occasionally during this process.
  • Season with salt and pepper and serve hot.
