Walnut pesto is a typical Ligurian dish made from walnuts, Parmesan cheese, olive oil, garlic, salt and toast soaked in milk. The walnuts in combination with the Parmesan cheese create a unique and nutty flavor. The pesto di noci goes perfectly with pasta, but can also be used as a spread, dip or as an ingredient in various dishes. It is easy to prepare and only requires a few ingredients, which can be quickly transformed into an aromatic and versatile pesto.
First, put the toast in a bowl, add the milk and let it soak for a few minutes.

In the meantime, peel the garlic and finely grate the Parmesan cheese.

Put the peeled walnuts into the container of the hand blender. Then also add the softened toast, as well as Parmesan and garlic to the nuts and salt to taste.
150 g walnuts
Now carefully mix on low speed with the hand blender until a homogeneous mass.
Then add the olive oil and the remaining milk and continue blending until the pesto has reached a nice creamy consistency.

The delicious pesto can now be combined with pasta or used as a spread and dip.
