Here comes a recipe for you and your kids…. and your friends… and family… simply for everyone! Streetfood alla italiana is what I like to call this delicious snack. Kind of a cross between a wrap and flatbread, it's topped with all sorts of delicious ingredients, then folded up and eaten immediately! And the best part… you only need 5 ingredients to make it….
Put the flour in the mixing bowl of the stand mixer. Add salt, lard and baking powder and let knead on low speed with the dough hook.
Add the water little by little. Let knead until the dough has a nice firm consistency. Then form into a ball and return to the bowl. Cover with a cloth and let rest for 30 minutes at room temperature.
Afterwards, remove from the bowl and divide into four equal pieces. Shape each of them into a ball. Cover again and let rise for another 30 minutes at room temperature.
After resting, shape the piadina. Put the dough balls on a floured work surface and roll out round with a rolling pin. The dough should remain at least 2mm/80mil thick.
Now heat a frying pan (without oil!). Fry the piadinas one after the other on both sides for 2 minutes until they are lightly browned.
Now the piadinas are ready to be topped and folded. You can give free rein to your creativity!
